Chocolate Butter Cream Icing




A tasty treat that can be used as a covering for cakes, or as a filling.  It keeps its shape well, so is ideal for piping onto cupcakes or decorating cakes.

Ingredients:

3oz (75g) butter or margarine
8oz (250g) icing sugar - sifted
1 tablespoon milk
1/2 teaspoon vanilla essence
2 tablespoons cocoa powder
2 tablespoons boiling water

Method:

1.  Blend the Cocoa powder to a paste with the 2 tablespoons of boiling water.  Set aside to cool
2.  Beat the butter or margarine with half of the icing sugar until the mixture is smooth and creamy.
3.  Add the remaining icing sugar with the milk, vanilla and cocoa paste
4.  Beat thoroughly until all the ingredients are combined and smooth.
5.  Use as appropriate.
