Chocolate Fudge Icing Recipe




Chocolate fudge icing makes a delicious topping for cakes.  It can be poured on when warm, or allowed to cool completely and used as a filling or for piping.  Ideal for piping onto cupcakes!

Ingredients:


2oz (50g) butter or margarine
3 tablespoons of milk
8oz (250g) icing sugar (Sifted)
2 tablespoons of cocoa powder (Sifted)

Method:


1.  Place the butter or margarine with the milk into a small pan and heat gently until melted.
2.  Add all the icing sugar and the cocoa powder, and beat until smooth and glossy
3.  Allow to cool slightly, then pour over the cake, spreading with a palette knife to cover the entire top and sides.

For Filling:
Allow the icing to cool completely, beating occasionally as it cools to prevent a skin forming.  Beat well and either use the icing as a filling, or pipe patterns.

Coffee Variation:
Replace the cocoa powder with 2 tablespoons of instant coffee powder.
